Mini Pumpkin Pies

- 1 can of pumpkin (15oz)
- 2 eggs
- 1 can of sweetened condensed milk
- 1 tsp of salt
- 1 tbsp pumpkin pie spice
- 2 store bought pie crust
Preheat oven to 400F. Combine pumpkin, eggs, milk, salt, and pumpkin pie spice. Using a jar, cut pie crust intro small circles. Ideally you need a 3-4 inch circle. Spray muffin pan and place the circles into each spot, forming a mini crust. Add pie filing into each mini crust and fill nearly to the brim. Using a festive cookie-cutter, cut out cute patterns from the rest of the pie dough and place on top of the pie filings. Bake for 30 minutes until lightly golden.
Every January we like to gather as a croux and plan for the year ahead. It serves as a holiday celebration and a strategy session. We look forward to it every year. Over the last few years, we’ve also begun incorporating a “word of the year” practice, where we each choose a word that we will focus on throughout the year.
