Cocoa Kahlua Cake

Ingredients:
- 1 package devil’s food cake mix
- 1 teaspoon ground cinnamon
- 3 eggs
- 1 cup cold coffee
- 1/3 cup Kahlua
- ½ cup vegetable oil
- Kahlua frosting (below)
Directions:
- Preheat oven to 350.
- In a large bowl combine cake mix, cinnamon, eggs, coffee, Kahlua and oil.
- Blend on low speed until moistened then at medium speed for 2 minutes.
- Pour batter into two greased and lightly floured 8-inch cake pans.*
- Bake at 350 for about 35 minutes or until cake is done.
- Cool in pans 10 minutes, then turn out onto wire rack and cool completely.
- Fill and frost with Kahlua frosting.
- Sprinkle top and sides with cocoa, cinnamon or grated chocolate.
- *You can also make it in one Bundt cake pan and just add 10 mins or so to the cook time.
Kahlua Frosting:
- 1 (16 oz.) carton of creamy chocolate frosting
- ½ teaspoon ground cinnamon
- 2 tablespoons Kahlua
- Combine all ingredients and beat to blend.
Every January we like to gather as a croux and plan for the year ahead. It serves as a holiday celebration and a strategy session. We look forward to it every year. Over the last few years, we’ve also begun incorporating a “word of the year” practice, where we each choose a word that we will focus on throughout the year.
